It's no secret in my household with how much I love guacamole. I make this Simple and Quick Guacamole at LEAST once a week, but with everything that has been going on.. I'm looking for something new. New flavors, brighter, more colorful!
Warm weather is finally here and that is probably the main inspiration for this. Well, that and wanting to use some of the produce I had just gotten from our local restaurant.
So, warm weather + fresh produce = match made in heaven.
This loaded guacamole is the perfect mix of salty, spicy, sweet, fresh, and vibrant to truly compliment any meal you want to serve this with. From a topping for rice bowls to just chips and dip, it's always delicious and perfect!
Equipment Needed
Ingredients
- Avocado
- Lime Juice
- Red Bell Pepper
- Bacon
- Corn
- Red Onion
- Jalapeño
- Cotija Cheese
Instructions
Combine the avocado and lime into a molcajete and mash until smooth.
Stir in the corn, bacon, red onion, cilantro, jalapeño, and corn.
Leave in the molcajete or transfer to a new bowl, top with lots of cotija, and enjoy!
How To Store
If there are some leftovers, you can store it in an airtight container in the fridge. The lime juice should keep the avocado from turning brown so, you should always have vibrant and delicious guacamole even if it's been left out or kept in the fridge!
Expert Tips
- Make sure the avocado's are ripe! You can tell by the dark brown exterior and when applying just a small amount of pressure, the avocado should give slightly. Don’t press too hard! If the avocado doesn’t give with just a little pressure, then it’s probably not quite ripe yet.
- You actually don’t need a citrus juicer to extract the juice from the lime. You can actually just gently squeeze the skin with your hand.
- If you don't have a molcajete, you can use a potato masher or a fork to mash the avocado's.

Fresh, vibrant, colorful, and SO GOOD! This 5-Minute Loaded Guacamole is the only guacamole recipe you'll ever need.
Ingredients
- 2 avocados
- ¼ small lime, juiced
- ¼ cup chopped red bell pepper
- ¼ cup chopped bacon
- ¼ cup fresh corn kernels
- ⅛ cup chopped red onion
- 1 Tablespoon chopped jalapeño
- 1 teaspoon chopped cilantro
- ⅛ cup crumbled cotija cheese
Instructions
- Slice the avocados in half, remove the seeds and skin. Place in a molcajete with lime juice. Mash avocado until smooth.
- Add bell pepper, bacon, corn, red onion, jalapeño, cilantro, salt, and pepper. Stir until well combined.
- Top with cotija cheese crumbles.
