If there ever was a way to kick off the weekend, it’s DEFINITELY with these waffles! They are delicious. Slightly sweet, fluffy, topped with berry puree, and whipped cream! Oh, and we can’t forget the ah-mazing fresh fruit (totally the best part about living in Florida. Fresh fruit almost all year round).
Growing up, my family and I went to Walt Disney World a lot (and I mean, a lot! My first trip, I was 10 weeks old!). We did what any normal family did. Go to the parks, ride rides, see characters, watch parades, and SLEEP IN! That’s right, Ian and I were the type of kids who L O V E D sleep. Mornings were always the enemy. Groggy and slow, always wanting those extra 15 minutes of sleep.
Since we were kids, we didn’t drink coffee and had no way to kickstart our loud and childish energy. Except, we were in the most magical place of all. There had to be something. Well, there was. Mickey waffles! That’s right. Mickey Mouse shaped waffles covered in maple syrup and butter. There was no better way to start the day! It was something I looked forward to almost every trip (I love Mickey Mouse shaped things, it just makes everything better).
From the Mickey Waffles at breakfast, we’d head into the parks bursting with energy (hello sugar rush!) and ready to make Disney World ours. Fast forward a couple of years and Mickey Waffles slowly faded from my diet (blasphemy, I know). But – I still tend to get a waffle craving almost every time I visit Walt Disney World. I’ve discovered that during all of the festivals, right outside of the Germany Pavilion in Epcot, there is a tiny booth representing Belgium. Here, I’ve learned, is where the best waffles on Disney property are hiding.
There are always two different types of waffles. One with whipped cream and chocolate sauce, the other with a berry compote and whipped cream. Can you guess by the photos which one I eat every single time? Yep! Berry compote. I LOVE IT! Some people love the funnel cakes or the churros or the turkey legs. I love the Belgian Waffle with Berry Compote and Whipped Cream.
Annnnd as many of you know, we haven’t been able to head to Disney in months. That’s not a horrible thing but you start to miss the most magical place on earth, you know? Especially my waffles. A couple of days ago, my mom and I had concocted a recipe for some fruit puree but it wasn’t until we did a mixed berry puree that all these memories started flooding back to me. This puree tasted just like the berry compote at Epcot. So naturally, when I woke up this morning, I asked my mom to pretty pleeeaaaase make a recipe for some Belgian Waffles for me; and what do you know? I woke up to the amazing smell of waffles fresh out of the waffle iron. We reheated our berry puree, tossed on some berries and whipped cream and BOOM! Instantly taken back to the happiest place on earth. So, we thought we’d share this recipe with you guys. Happy cooking!
Belgian Waffles with Fruit Puree and Whipped Cream
- 2 cups all purpose flour sifted
- 2 teaspoons baking powder
- ½ teaspoon salt
- 2 Tablespoons granulated sugar
- 2 large eggs lightly beaten
- 4 Tablespoons unsalted butter melted
- 1-1/2 cups milk
- 1 teaspoon vanilla
- 1 cup heavy cream
- ½ teaspoon vanilla
- 1 Tablespoon powdered sugar
- 2 pints fresh or frozen fruit
- ½ cup granulated sugar
- 4 teaspoons lemon juice
- Combine flour, baking powder, salt, and sugar in a medium bowl.
- Make a well in the center of the flour mixture and add milk, eggs, melted butter, and vanilla.
- Use a spatula to stir just until combined. (It’s okay if it’s lumpy!)
- Pour onto hot, oiled waffle iron.
- Cook to desired degree of doneness.
- Remove to plate. Top with berry puree, whipped cream, and fresh berries.
- Serve immediately!
- Combine heavy cream, vanilla, and sugar in a small mixing bowl.
- Beat until medium peaks form.
- Place all ingredients in a sauce pan.
- Cook over medium heat, stirring constantly, and breaking up fruit pieces, until sugar is dissolves completely.
- Remove from heat and let cool.
- Transfer mixture to bowl of food processor.
- Process for one minute.
- Strain using a mesh strainer into a clean bowl.
