These Easy Southern Cheese Straws are a classic. Though, these may not be shaped like straws, they are packed with flavor in a cute cheese crisp form! Plus, this way, they are so much easier to package and give.
Much like our Nut Cake, making these cheese straws is a holiday tradition. Though, since this recipe doesn't require alcohol and getting things done in time, my mom generally let us kids make this recipe.
Somehow, we never got tabasco or cayenne in our eyes... but a lot of the dough for these crisps wound up in our bellies rather than rolled out and crushed on the pan.
In our defense, tasting this recipe is key to getting proportions right!
Messes were always made and my mom always handled putting it in the oven and cooking them while we ran off and played.
Not much has changed to this day. Maybe there's a bit less dough throwing and a little more focus on actually making these crisps but the fun is always there!
While rolling and pressing, we turn on a movie or some music to help the time go by. This recipe makes a lot so make sure you have some friends and family to help you out!
How to make cheese straws
As always, gather your ingredients first. There's only five so it won't ake long.
Next, place your chex on a sheet pan and toast them in the oven for about 10 minutes, or until lightly browned.
Now, combine the butter and cheddar in a large bowl.
Crush the chex and place them into the butter mixture. Mix together until thoroughly combined.
Add flour and mix well!
Once the mixture is done, take a small piece of dough and roll it into a 1 inch ball. Place them on sheet pan.
Now that's done, using a pastry tamper, press down the cheese balls into a thin crisp. About ⅛ inch thick!
Place the sheet pans in the oven and bake at 350 degrees for about 12 minutes, or until it just starts to brown.
Let them cool and serve!
can you freeze cheese straws
Personally, we have never frozen them. They last a really long time without freezing. They are basically just a cracker so, I wouldn't freeze them. Just keep them in an airtight container on the counter!

- Have a small bowl of flour to dip your pastry tamper into so the dough doesn't stick when you press it down!
- The cooking time ranges. They can be done in anytime between 10-15 minutes so keep an eye on them!
- The seasonings don't have a measurement because this is truly to taste. We like a lot of spice so we tend to add a lot of tabasco and cayenne.
- Cheese straws last a long time when kept in an air tight container on the counter.

Easy Southern Cheese Straws
A southern classic! These cheese straws are perfect for gifting, making for parties, or just as a little snack.
Ingredients
- ¾ cup + 2 Tablespoons salted butter, room temperature
- 8 ounces sharp cheddar, grated
- 2 cups Rice Chex, toasted
- 2 cups all purpose flour
- Salt, cayenne pepper, and Tobasco, to taste
Instructions
- Set butter out and let it come to room temperature.
- Grate cheese and allow it to come to room temperature.
- Spread Rice Chex on a sheet pan and bake in 350 degree oven for 5-10 minutes, stirring occasionally, until starting to turn a light golden brown. Set aside to cool. Leave oven on.
- Combine butter and cheese in a medium bowl. Work together until thoroughly combined.
- Crush Rice Chex and stir in until combined.
- Add flour, ½ cup at a time, mixing well after each addition.
- Season with salt, cayenne, and Tobasco.
- Form dough into 1 inch balls and place 2 inches apart on ungreased sheet pan. (1 pan will hold 35 balls.)
- Flatten dough balls to ⅛ inch thickness.
- Bake at 350 degrees for approximately 12 minutes, until just starting to color.
