Our favorite Fresh Strawberry Bread with Strawberry Icing. It’s just like the classic loaf you know and love, but even BETTER! Made in only two bowls, uses fresh strawberries, quick to make (takes less than 10 minutes to mix up!), and tastes SO GOOD. That pretty much sums up this delicious bread. Whether you’re looking for a recipe to use up your fresh strawberries or simply want to reminisce with this classic treat, this loaf is the perfect treat to bake up today, this weekend, whenever!

About The Recipe

Even though we are still in the middle of winter, I am dreaming of spring! I cannot wait for the weather to begin warming up, the sun to come out more often, and all the beautiful spring flowers start to bloom.

And, with strawberry season in full swing here in Texas, my mom and I thought it would be fun to share one of our favorite loafs to make during strawberry season…

Fresh Strawberry Bread!

This recipe is an adaptation of my great grandmother’s spiced strawberry bread (if you’d like that recipe, let us know in the comments below!).

My mom has evolved the recipe over the years. Instead of frozen strawberries, we use fresh. We leave out the spice and add a sweet strawberry icing on top!

A few tweaks here and there over the years has created one of my favorite loaves to celebrate spring and summer.

It’s soft, moist, perfectly sweet, with chunks of fresh strawberry in every single bite!

The best part? This recipe only needs about 2 bowls, mixes up rather quickly, and is a great way to use in-season strawberries.

So. GOOD.

What is Strawberry Bread?

Strawberry Bread is a sweet quick bread (think, banana bread) made with fresh sweet strawberries. It typically has a spice, such as cinnamon, and can have frozen strawberries or nuts.

This version is a very simple quick bread made with fresh strawberries!

Equipment Needed

Ingredients

(Full ingredient amounts and instructions can be found in the recipe card at the bottom of the post)

For The Bread:

  • Chopped Fresh Strawberries – The most important ingredient! Be sure to thoroughly wash your strawberries and check for any mold and/or severe bruising.
  • All-Purpose Flour – You will need flour for the bread, as well as coating the chopped strawberries.
  • Granulated Sugar – Not only does the sugar add sweetness to this bread, but it also promotes browning, keeps it moist, and gives it the perfect structure!
  • Baking Powder – Just a dash of baking powder provides the right amount of rise to this loaf.
  • Salt – One of the most important ingredients in baking! Salt helps cut some of the sweetness and helps enhance all of the flavors.
  • Whole Milk – Remember to measure out and allow the milk to come to room temperature.
  • Vegetable Oil – The oil keeps this cake moist and creates the perfect texture.
  • Large Eggs – Remember to set out your eggs ahead of time to allow them to come to room temperature!
  • Vanilla Extract – A splash of vanilla gives this loaf a wonderful undertone.

For The Icing:

  • Powdered Sugar – Be sure to sift your powdered sugar before making the icing.
  • Strawberry Powder – This is what gives the icing all of it’s flavor! If you don’t have strawberry powder, you can make some by finely grinding freeze-dried strawberries.
  • Whole Milk – A splash of milk makes this icing thick enough to coat the cake, but thin enough to not be too heavy!
  • Vanilla Extract – Adds just a little bit of falvor to this icing.

How To Make Strawberry Bread

Step 1: Coat strawberries

In a medium bowl, toss strawberries with 2 Tablespoons flour. Set aside.

Step 2: Prepare batter

In a large bowl, whisk together 2 cups flour, sugar, baking powder, and salt.

Add the milk, oil, eggs, and vanilla. Whisk until smooth.

Fold in strawberries.

Step 3: Bake

Spoon into prepared pan. Bake for 45 minutes. Cover with foil. Continue baking for an additional 35 minutes, or until done.

Allow to cool to touchable temperature in pan, about 25-30 minutes. Turn out onto cooling rack. Allow to finish cooling.

Step 4: Make icing

In a small bowl, whisk all ingredients together until smooth.

Spread on cooled bread.

Why Coat The Strawberries in Flour?

Coating the strawberries in flour helps keep them all from sinking to the bottom of the pan while baking!

How To Store

Once this loaf is cooled, you will need to keep it in a zip tip bag and in the fridge! It’s a very moist loaf and won’t last very long if left at room temperature.

ou can also freeze this loaf as a whole or in individual slices. Just be sure to wrap the slices in plastic wrap and place them in a freezer safe container or zip top bag!

Substitutions

  • You can use frozen strawberries instead of fresh.
  • To make this recipe dairy-free, you can use your favorite non-dairy milk!
  • You can also make this recipe vegan by using a non-dairy milk and your favorite vegan egg substitute.

Ingredients
 

Bread

  • cups chopped fresh strawberries
  • 2 Tablespoons all purpose flour
  • 2 cups all purpose flour*
  • cup granulated sugar
  • 2 teaspoons baking powder
  • teaspoon salt
  • cup whole milk
  • ½ cup vegetable oil
  • 2 large eggs, room temperature
  • teaspoons vanilla extract

Icing

  • ½ cup powdered sugar, sifted
  • 1 Tablespoon strawberry powder
  • 1 Tablespoon whole milk
  • ¼ teaspoon vanilla extract

Instructions
 

Bread

  • Heat oven to 350℉.
  • Spray a 9 inch loaf pan with baking spray. Set aside.
  • In a medium bowl, toss strawberries with 2 Tablespoons flour. Set aside.
  • In a large bowl, whisk together 2 cups flour, sugar, baking powder, and salt.
  • Add milk, oil, eggs, and vanilla.
  • Whisk until smooth.
  • Fold in strawberry mixture.
  • Spoon into prepared pan.
  • Bake for 45 minutes.
  • Cover with foil.
  • Continue baking for an additional 35 minutes, or until done.
  • Allow to cool to touchable temperature in pan, about 25-30 minutes.
  • Turn out onto cooling rack.
  • Allow to finish cooling.

Icing

  • In a small bowl, whisk all ingredients together until smooth.

Notes + Tips!

*This recipe was written using an average of the dip and sweep method for measuring flour and the spoon and level method. If you are using a scale, you will need to add 3/4 oz or 22 g  to the measurement for each cup of flour.

    Really great flavor! I couldn’t find strawberry powder…I used strawberry nesquick. It worked fine. I love the flavor and very moist. Have made it multiple times! This last time I used raspberries and it was great!
