Serve with your favorite chips, over rice bowls, with tacos, or alongside some of your favorite Mexican dishes! Every bite is truly an explosion of flavor. From the spiciness of the jalapeño, to the sweetness of the tomatoes and onions. It's not only easy to make and super delicious, it’s also a great way to use up some of your summer produce! About The Recipe
One of the things we make the most during the summer is this fresh tomato salsa! We have been making it for YEARS. I can remember summers growing up where we would run to the garden, pick fresh tomatoes off the vine, and run back to the kitchen to help the adults prepare.
We mostly washed the produce while everyone else did the actual work, but we felt like we were helping! Plus, there was always so much because we always had a house full during the summer.
This was a great way to get us kids (and the adults, too!) to get some veggies down.
Served along with chips or whatever we were having that night, the adults always enjoyed a Classic Lime Margarita, while us kids always seemed to have a cool-aid or a glass of lemonade.
But, times have changed. Summers aren't always so busy and packed, but we still make this salsa. Just not in the quantities we used to!
Still, this salsa is just as delicious as I remember it being. So much easier to make now that we're making less of it!
Serve it with chips, with tacos, or over your favorite rice bowl. However you intend to use it, it will always be delicious and the perfect addition to your meal!
Ingredients
- Tomatoes
- Onion
- Lime Juice
- Jalapeño
- Garlic
- Cilantro
- Salt & Pepper
Instructions
In a large mixing bowl, combine all ingredients and stir carefully until well combined.
Transfer into a serving bowl, or use to top your dish.
How To Store
The best thing about this salsa is that it keeps! Once you're done with it, transfer it into an airtight container and keep in the fridge for about a week. The color will fade and you will have more juice, but after about 4 days or so, keep an eye on it. Since all the ingredients are fresh, it may sour sooner than a week.
Substitutions
- If you don't have cherry tomatoes, you can use whatever tomatoes you have on hand. Just chop them into small enough bites.
- Feel free to use a mix of peppers, if you wish. We just prefer jalapeños so it's spicy without being overwhelmingly spicy.
- You can use red onion instead of yellow, but it won't be as good. The yellow onion brings out a much sweeter flavor in the salsa whereas the red onion brings out a hotter, more intense flavor.

- You can use pre-chopped produce from the store.
- If you don't have a citrus juicer, you can twist and squeeze the lime once it's cut to extract the juice.
- Cherry tomatoes are the best tomato to use for this salsa.
- This keeps for about 4-7 days in the fridge.

Ingredients
- 2 pints grape tomatoes, chopped
- 1 cup chopped onion
- Juice of 1 lime
- 1 jalapeño, chopped
- 2 garlic cloves, crushed
- 1 loosely packed cup of cilantro, chopped
- Salt and pepper, to taste
