How to Roast Garlic

Roasting garlic is one of the easiest and tastiest ways to add flavor to a savory dish. Learning how to roast garlic is so easy! It only takes about 2 minutes of prep – and a little patience while it roasts. And patience can be hard because the smell coming from the oven will make you drool!

Today we thought we’d do something just a little bit different than what we normally do. This is a series we hope you’ll enjoy! It’ll be covering the basics that we feel everyone should know.

So, we’re kicking it off with how to perfectly roast garlic!

This is something we always keep in the fridge. It’s great for adding amazing flavor to everything! From mashed potatoes to vegetables to pizza.

It also makes a great topping for a nice toasted piece of bread. You can even bake it into your loaf!

It’s also an amazing addition to our homemade chili paste.

The list goes on and on! We are always finding something to add it to.

While raw garlic has a sharp bite to it, roasted garlic has a mellow, almost sweet flavor. The first time I tried it was 20+ years ago at Portobello, an Italian restaurant that actually no longer exists at Disney Springs.

It was served with the bread that came out before our meal. No olive oil, just roasted garlic. One bite and I was in love!

When we got home, it didn’t take me long to figure out just how to make it. And then to start putting it in everything!

For the next year or so, I think all my private clients (and probably more than a few of my catering clients) were just praying I didn’t put it in their desserts!

How To Make

The first step in learning how to roast garlic is selecting the right head of garlic. You don’t want one of those rag tag, outer paper ripped, one or two cloves dried out heads that you always find on top at the grocery store!

Dig on down in there and find a nice firm pod of garlic without any soft spots. Make sure the cloves are packed tightly together and the paper skin is tight, not ripped.

Once you get home with it, use a sharp knife and cut the top fourth of the head of garlic off.

Put it on a piece of aluminum foil, and then drizzle it with olive oil. Wrap it tightly, and bake it in a 350 degree oven for 1 hour.

How To Store

You can store the roasted garlic in a zip top bag, a plastic container, or just keep it wrapped in aluminum foil in the refrigerator for about a week.

You can also freeze it, but make sure you separate out the cloves before you do!

How To Use

This is the best part! Simply squeeze the bottom of the clove and the garlic will squeeze out in a soft, paste like texture. It’s perfect for so many recipes!

Expert Tips

  • Make sure your garlic is fresh, not soft, and the skin is undamaged.
  • You can also use avocado oil, if you want!
  • Keep the roasted garlic stored in an airtight container/bag/aluminum foil in the refrigerator or freeze in a freezer safe bag/container. Just make sure you squeeze all the garlic from the cloves before you do so!
  • This makes for a great topping on pizzas, breads, pastas, mashed potatoes, etc.
  • This recipe is very aromatic so, make sure you’re ready for the whole house to smell of roasted garlic.

  • 1 whole head of garlic
