Instant Pot Rosemary Chicken and Wild Rice

Changing up the normal, plain chicken dinner with this amazing weeknight Instant Pot Rosemary Chicken and Wild Rice! This is seriously the easiest weeknight dinner. Cozy, flavorful, moist, and the perfect well-rounded dinner for the family. Using pantry ingredients like chicken, wild rice, chicken stock, mushrooms, and the ultimate trio of veggies. Oh, and all made in less than 30 minutes in your instant pot!

About The Recipe

I know this probably looks like your basic chicken and rice recipe, but I can guarantee that the flavor of this is anything but! It’s so easy, perfectly fluffy rice, the best veggies, and rosemary… Can anything get better?

It’s literally just toss in into the instant pot, wait ten minutes, and have a delicious meal that the whole family can enjoy.

It’s kinda become one of our go-to dinners because these are ingredients we always have in the pantry/fridge. Honestly, who knew something so good and healthy and easy could be so tasty?

I definitely didn’t!

This recipe is definitely the best way to upgrade your weeknight dinners.

Ingredients

  • Wild Rice
  • Yellow Onion
  • Green Bell Pepper
  • Celery
  • Mushrooms
  • Garlic
  • Fresh Rosemary
  • Chicken Stock
  • Chicken Breasts

Instructions

First, season the chicken with salt and pepper. Set aside.

Now, combine everything into the instant pot! Seal and press the pressure cooker setting, select poultry, and set for ten minutes. Once it’s done, release the steam.

Remove the rosemary from the pot and serve! Seriously, can it get any easier?

How To Store

If you have some leftovers, store this in an airtight container and place in the fridge! It should keep for about 2-3 days. It makes for a super healthy lunch, or even a great part of leftovers night!

Substitutions

  • If you don’t like rosemary, you can easily substitute with thyme or even tarragon.
  • You can also use dried herbs, but the flavor won’t be as fresh and vibrant. You will need to scale the amount of rosemary back if you opt for dried.
  • Store-bought chicken stock can be substituted for homemade.

  • Make sure to clean your chicken thoroughly before seasoning.
  • Any rice can be used!

Ingredients
 

  • 1 cup wild rice
  • ½ cup chopped onion
  • ¼ cup chopped bell pepper
  • ¼ cup chopped celery
  • ½ cup sliced mushrooms
  • 3-4 cloves garlic crushed
  • 1 large sprig rosemary
  • 1 cup [chicken stock]
  • 2 boneless skinless chicken breasts
  • salt and pepper to taste

Instructions

  • Add rosemary and chicken stock.
  • Place chicken breasts on top.

  1. I tried this and the wild rice was not cooked at the end of the 10 minutes and quick release. Another recipe says to cook wild rice in the instant pot for 15 minutes with 10 minutes natural release, another even says to cook wild rice for 30 minutes in the instant pot.

    1. Hi, Rob! Thanks for the feedback. It’s probably the brand of wild rice you are using. Every brand has a different cook time. I would guess that’s why you found different cook times for different recipes.
