About The Recipe

I’m always looking for a good, quick, and easy snack during these summer months. Just something I can grab and run back outside with, you know? Well, as it turns out, these bars are the perfect thing!

My mom and I have been working in the yard quite a bit lately, so snacks have been a necessity. That, and water. But, during these hot Texas months, I tend to crave something a little sweet.

These bars have been the perfect thing! They use up some of the peaches we’ve been buying at the farmers market, while allowing us to make a delicious and quick snack.

Oh, and you can really cut them into any shape you like! Squares make for a bigger, more filling serving, while cutting them into rectangles (smaller bars) has worked great for quick snacks!

So, whether you’re looking for a quick snack or a sweet dessert, these crumble bars are perfect for you.

Instructions

In a medium sized pot, combine the peaches, lemon juice, and sugar. Cook over medium-low heat for 10-15 minutes, or until thickened and the peaches have broken down. Set aside.

In the largest bowl of the food processor, combine the all purpose flour, almond flour, oats, brown sugar, nutmeg, butter, and salt. Pulse until dough forms.

Place 2/3 of the crust mixture into a greased pan. Press down with your hands until the crust is level. Bake at 350 for 10-15 minutes, or until the edges are just starting to brown.

Spread jam across the top.

Sprinkle the remaining amount of crumble on top and bake for another 35-40 minutes.

Let cool in the pan before running a knife along the edge to unstick the jam from the sides. Turn out carefully, slice, and serve!

What Kind of Peaches Should I Use?

When peaches start coming into season, it’s hard not to buy all varieties and enjoy them! Trust me, I know. And while all peaches are delicious, yellow peaches are your best bet for baking! Especially if you can find Freestone Peaches.

Freestone peaches mean it’ll be easier to get the fruit off of the seed. If you can’t find them, Clingstone peaches will work just fine. Just remember, they are quite a bit harder to get off the seed and you will need to be extremely careful.

Peach Preserves, Peach Jam, or Peach Pie Filling?

Whether you have homemade or store-bought, either one will work fine! We personally prefer homemade peach jam, but that’s our opinion! If you have a jar of peach filling you need to use, feel free!

Just remember, if you have chunks of peaches in something, you may want to use the food processor to make it smooth. It’ll be more enjoyable in the bar this way!

How To Store

Once baked, you can store these crumble bars in an airtight container in either the refrigerator or freezer! They’ll keep for 5-7 days in the fridge, whereas they’ll keep for a few months in the freezer. Just remember to let them thaw before eating!

Substitutions

  • You can use store-bought jam instead of homemade.
  • You can use your favorite vegan butter to make this a delicious vegan treat!

Expert Tips

  • The jam will stick to the sides of the pan. You will need to run a knife along the edges before turning it out.
  • Make sure the base is level! If it’s not, your bars might crumble and break completely.
  • Try and keep the layers thin! The thicker the layers of crumble and filling, the longer it’ll take to cook, and the more difficult it is for it to set.
