Homemade Belgian Waffles

The ultimate breakfast treat! These Homemade Belgian Waffles are crunchy, lightly sweetened, fluffy, and SO much better than traditional waffles.
Waffles
- 2 cups all purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 2 Tablespoons granulated sugar
- 2 large eggs, separated
- 4 Tablespoons unsalted butter, melted
- 1½ cups whole milk, room temperature
- 1 teaspoon vanilla extract
Waffles:
Heat waffle iron according to manufacturer's instructions.
In a medium bowl, beat egg whites to medium stiff peaks. Set aside.
Whisk flour, baking powder, salt, and sugar together in a medium bowl.
Add milk, egg yolks, melted butter, and vanilla.
Whisk until smooth.
Fold in egg whites.
Spray waffle iron with cooking spray, or brush with oil.
Ladle batter into waffle iron.
Cook to desired degree of doneness.
Substitutions:
- To make this recipe vegan, you can use 2 ounces of aquafaba in place of the egg whites, as well as your favorite plant based milk and butter.
Expert Tips:
- Be careful to not over-whip the egg whites! If they are over-whipped, they will dry out and not incorporate into the batter.
- When folding the egg whites into the batter, be very gentle. You don't want to deflate them!
- The amount of waffles this recipe makes/how long the cook time will be will vary depending on the size of your waffle iron.
