Fresh Blackberry Galettes

Bursting with flavor, these Fresh Blackberry Galettes are the perfect summertime treat! They're so simple to make, flaky, perfectly sweet, and SO good.

Ingredients

Crust

  • 2 cups all purpose flour
  • 2 Tablespoons sugar
  • 1 cup salted butter, cut into chunks
  • 1 ½ teaspoons apple cider vinegar
  • 2 Tablespoons heavy cream

Blackberry Filling

  • 4 cups fresh blackberries
  • ½ cup sugar

Instructions

Crust

  • Combine flour and sugar in food processor bowl.
  • Pulse a couple of times to mix.
  • Add butter, a few pieces at a time, pulsing after each addition.
  • Pulse until the size of small peas.
  • Add vinegar and cream.
  • Pulse until combined.
  • Divide into 4 equal portions.
  • Lightly form into rectangle and wrap in plastic wrap.
  • Refrigerate for 30 minutes.
  • Remove from refrigerator, one at a time, and place on lightly floured parchment paper.
  • Lightly dust the top with flour and roll into a rectangle. (It doesn't need to be perfect.)
  • Return each piece to refrigerator after rolling.

Filling

  • In a large bowl, combine blackberries and sugar.
  • Toss lightly.

Putting It Together

  • Preheat oven to 375 degrees.
  • Working with one crust at a time, remove from refrigerator. Leave it on parchment.
  • Spoon 1 cup of blackberry mixture in center of crust.
  • Fold edges up over the filling, leaving the center open.
  • Place on baking sheet.
  • Repeat with remaining crusts and filling.
  • Brush the outside of the pastry with heavy cream and sprinkle with coarse sugar.
  • Bake for about 25 minutes, until crust is golden and fruit is cooked through.
  • Transfer to wire rack to cool.

Notes

Substitutions:
  • You can use store-bought pastry dough, but we can't guarantee cooking times or measurements.
  • Feel free to use any kind of berry you like or even a combo!
Expert Tips:
  • Brushing the pastry with cream will help with the browning!
  • You may need to turn the oven on low broil to achieve an even golden brown color across the galettes.
  • You can make this recipe without a food processor, but the food processor definitely makes it easier!
  • This recipe is vegetarian.
