Glazed Pumpkin Pecan Scones

These Glazed Pumpkin Pecan Scones are tender, easy to make, and are the perfect baked Autumn treat for breakfast! SO. GOOD.

Ingredients

Scones

  • 1 cup canned pumpkin
  • 2 large eggs
  • ½ cup heavy cream
  • 1 teaspoon vanilla
  • 3 cups all purpose flour
  • 1 Tablespoon baking powder
  • 1 teaspoon salt
  • cup sugar
  • 1 Tablespoon pumpkin pie spice
  • ¾ cup unsalted butter
  • 1 ½ cups chopped pecans

Glaze

  • 1 cup powdered sugar, sifted
  • 2 Tablespoons milk
  • ½ teaspoon vanilla

Instructions

Scones

  • Preheat oven to 375 degrees.
  • Line 2 baking sheets with parchment paper. Set aside.
  • In a medium bowl, combine pumpkin, eggs, cream, and vanilla. Mix well. Set aside.
  • In a large bowl, whisk together flour baking powder, salt, sugar, and pumpkin pie spice.
  • Grate butter into dry ingredients.
  • Toss lightly to combine.
  • Add pecans.
  • Pour wet ingredients over dry and stir gently to combine.
  • Divide dough in half.
  • Working with 1 half at a time, gently form dough into a ball and place on floured surface.
  • Sprinkle top lightly with flour.
  • Pat out into an 8" circle that is 1/2" thick.
  • Using a pizza cutter or sharp knife, cut into 8 wedges.
  • Place on prepared pan.
  • Repeat with 2nd half of dough.
  • Bake for 20 to 25 minutes, until done.
  • Cool on wire racks.

Glaze

  • Combine powdered sugar, milk, and vanilla in a small bowl.
  • Beat until smooth.
  • Drizzle over cooled scones and top with extra chopped pecans, if desired.

Notes

  • Make sure the butter is cold before grating.
  • Check the expiration date on the baking powder.
  • Remember to preheat the oven!
  • Don't overwork the dough. Just lightly fold/toss everything together to ensure the flakiest and most tender scones.
  • You can cut these scones into any shape you like!
  • This recipe freezes and reheats really well.
