A true southern classic! This Pecan Pie is perfectly sweet, nutty, buttery, and just SO. GOOD. It's the perfect pie to serve during Thanksgiving and Christmas.
1 unbaked pie crust 2 cups pecan halves 4 large eggs, room temperature 1 cup brown sugar, firmly packed 1 ¼ cups light corn syrup 4 Tablespoons unsalted butter, melted 2 teaspoons vanilla extract ¾ teaspoon salt
Heat oven to 375 degrees F.
Place pecans in bottom of unbaked pie shell.
In a small bowl, whisk eggs together. Set aside.
Combine sugar and corn syrup.
Stir together.
Add butter, vanilla, and salt.
Mix well.
Gently stir in eggs, being careful not to incorporate air.
Pour over pecans.
Bake for 10 minutes.
Reduce heat to 325 degrees F.
Continue baking for an additional 55-60 minutes, until puffy and set. You may need to cover with foil for the last 20-25 minutes of baking.
Let the pie cool completely before serving!
Cover the pie with tinfoil the last 20-25 minutes to keep the crust from over-browning.
You can use homemade or store-bought pie crust.
The pie will puff when done and will jiggle slightly.
