Spiced Apple Walnut Oatmeal Cookies

Spiced Apple Walnut Oatmeal Cookies...aka the perfect cookie to bake this Fall! Every bite is soft, chewy, perfectly spiced, and full of apple flavor. So delicious!

Ingredients

  • cups all purpose flour*
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • teaspoon salt
  • teaspoons apple pie spice
  • cup unsalted butter room temperature
  • 1⅓ cups brown sugar firmly packed
  • 1 large egg room temperature
  • 1 large egg yolk room temperature
  • teaspoons vanilla extract
  • 2 cups rolled oats
  • 1⅓ cups chopped dried apples
  • 1 cup chopped walnuts

Instructions

  • Heat oven to 350℉.
  • Line 2 sheet pans with parchment paper. Set aside.
  • In a medium bowl, whisk together flour, baking powder, baking soda, salt, and apple pie spice. Set aside.
  • With an electric mixer, beat butter and sugar until light and fluffy, about 2-3 minutes.
  • Add egg, egg yolk, and vanilla.
  • Beat until fully incorporated.
  • Add flour mixture.
  • Mix only until all ingredients are moistened.
  • Stir in oats, apples, and walnuts.
  • Drop by rounded spoonfuls onto prepared pans.
  • Flatten slightly.
  • Bake for 14 minutes, or until done.
  • Allow to cool on pan before removing.

Notes

*This recipe was written using an average of the dip and sweep method for measuring flour and the spoon and level method. If you are using a scale, you will need to add 3/4 oz or 22 g  to the measurement for each cup of flour.
Substitutions:
  • Pecans can be used instead of walnuts.
  • If you don't have apple pie spice, cinnamon can be used instead!
Expert Tips:
  • Do not use instant oatmeal for this recipe.
  • Make sure all of your ingredients are room temperature!
  • Be careful to not over-mix your cookie dough.
  • We used a 3 Tablespoon cookie scoop to make this recipe. If you use less/a smaller cookie scoop, the bake time will need to be adjusted.
  • These cookies need to be tapped down slightly before baking.
  • Once these cookies start to turn to a slight golden color, that means they're done!
