Taking it back to childhood today with these copycat Cosmic Brownies! Every bite is extra chocolate-y, fudgy, and oh-so delicious. The best part? They're easy to make and even BETTER than store-bought!
Spray an 8 inch square pan with baking spray. Set aside.
Combine chocolate and butter in a microwave safe bowl.
Microwave on high power for 30 seconds.
Stir well.
Continue to microwave in 15 second increments, stirring after each, until melted and smooth. Set aside.
Combine eggs, sugar, and vanilla in a large bowl.
Whisk until smooth.
Add chocolate.
Whisk until well combined.
Add flour.
Stir only until blended.
Pour into prepared pan.
Bake for 20 minutes, or until desired degree of doneness.
Cool in pan for 10 minutes.
Turn out onto cooling rack and allow to cool completely.
Frosting
Place chocolate and cream in a microwave safe bowl.
Microwave on high power for 30 seconds.
Stir well.
Microwave in 15 second increments, stirring after each, until chocolate is melted.
Continue stirring until completely combined and smooth.
Pour on top of cooled brownies.
Spread to edges.
To Finish
Top with sprinkles.

*This recipe was written using an average of the dip and sweep method for measuring flour and the spoon and level method. If you are using a scale, you will need to add 3/4 oz or 22 gto the measurement for each cup of flour.Substitutions:
Semi-sweet can be used in place of bittersweet chocolate.
To make this recipe dairy-free, you can use a dairy-free chocolate and your favorite plant-based butter.
Expert Tips:
If you're worried the brownies may stick, place an 8 inch square piece of parchment in the bottom of your pan. Then, spray with baking spray!
Be careful to not over-mix the brownie batter!
These brownies are very fudgy. If you like them a little more done, leave in an additional 5 minutes.
To get the ganache to set faster, place the brownies in the fridge for 10-15 minutes!
