Ingredients

  • 3 cups all purpose flour

  • Divide dough into 2 ounce portions.
  • Roll into balls.

  • Place a cast iron griddle over medium-low heat.
  • Remove one dough ball at a time and roll into a 6 inch circle.
  • Place on heated griddle.
  • Cook until the tortilla starts to puff and is just starting to develop brown spots, about 1-2 minutes.
  • Flip over.
  • Continue to cook for 30 seconds to 1 minute, until brown spots start to develop.
  • Remove to a plate and cover with a damp cloth.
  • As each tortilla is cooked, stack it under the cloth on top of the others.

Notes

Substitutions:
  • If you would like to make this recipe vegan, use your favorite plant-based butter!
  • Unsalted butter or vegetable oil can be used. Just remember you may need to add salt!

Expert Tips:
  • Be sure to cover the dough when letting it rest.
  • If you don't have a scale, you can simply divide the dough into 12 even balls.
  • The tortillas do not have to be perfect circles.
  • Try and roll them as thin as you can! The thinner, the better.
  • Do not flour your work surface when rolling out the tortillas!
  • These tortillas cook better when allowed to rest the full 20 minutes, but they can be made immediately after mixing together.
