Berries and Cream Parfait

This Berries and Cream parfait is light, airy, fluffy, caramel-y, and loaded with delicious fresh berries! It's the perfect summer dessert!

Ingredients

  • 2 cups heavy cream cold
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • ½ cup dark brown sugar firmly packed
  • 4 cups fresh berries washed, drained, and sliced

Instructions

  • Whip heavy cream and vanilla at high speed of an electric mixer until stiff peaks form, 2-3 minutes.
  • Stir in sour cream.
  • In a 16 ounce glass, layer ½ cup berries then ½ cup cream mixture.
  • Top with 1 Tablespoon dark brown sugar.
  • Repeat layers until you reach the top of the glass.
  • Cover with plastic wrap.
  • Refrigerate overnight.
  • Before serving, remove from refrigerator and remove plastic wrap.
  • Top with fresh berries.

Notes

  • Make sure the heavy cream is cold, or it won't whip.
  • Don't be tempted to substitute light brown sugar. The extra molasses in the dark brown sugar is what gives this dessert its caramel-y flavor.
  • While you can serve this dessert without the berries, the berries add an extra dimension of sweetness and flavor!
  • This recipe can be made in a larger container (such as a trifle dish) with or without the berries layered in it.
