Berries and Cream Parfait

This Berries and Cream parfait is light, airy, fluffy, caramel-y, and loaded with delicious fresh berries! It's the perfect summer dessert!
- 2 cups heavy cream cold
- 1 teaspoon vanilla extract
- 1 cup sour cream
- ½ cup dark brown sugar firmly packed
- 4 cups fresh berries washed, drained, and sliced
Whip heavy cream and vanilla at high speed of an electric mixer until stiff peaks form, 2-3 minutes.
Stir in sour cream.
In a 16 ounce glass, layer ½ cup berries then ½ cup cream mixture.
Top with 1 Tablespoon dark brown sugar.
Repeat layers until you reach the top of the glass.
Cover with plastic wrap.
Refrigerate overnight.
Before serving, remove from refrigerator and remove plastic wrap.
Top with fresh berries.
- Make sure the heavy cream is cold, or it won't whip.
- Don't be tempted to substitute light brown sugar. The extra molasses in the dark brown sugar is what gives this dessert its caramel-y flavor.
- While you can serve this dessert without the berries, the berries add an extra dimension of sweetness and flavor!
- This recipe can be made in a larger container (such as a trifle dish) with or without the berries layered in it.
