Cranberry Bliss Bars (Starbucks Copycat Recipe!)

These Cranberry Bliss Bars are like Christmas in bar-form! The perfect combination of sweet white chocolate, tangy cranberries, warming ginger, zesty orange, and rich cream cheese frosting. It's the perfect treat for this holiday season!

Ingredients

Bars

  • ¾ cup unsalted butter melted
  • cups brown sugar firmly packed
  • 3 large eggs room temperature
  • 1 Tablespoon vanilla extract
  • cups all purpose flour*
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • teaspoon salt
  • ½ teaspoon ground ginger
  • cup dried cranberries
  • ¾ cup white chocolate chips

Frosting

  • 1 cup heavy cream cold
  • 8 ounces cream cheese cut into 1-inch cubes
  • 2 cups powdered sugar sifted
  • ¼ teaspoon orange zest
  • teaspoon salt
  • 1 teaspoon vanilla extract
  • Dried cranberries to top

Instructions

Bars

  • Heat oven to 350℉.
  • Spray a 9 inch x 13 inch pan with baking spray. Set aside.
  • In a large bowl, whisk butter and sugar together.
  • Whisk in eggs and vanilla.
  • Add flour, baking powder, baking soda, salt, and ginger.
  • Mix until blended.
  • Fold in cranberries and chocolate.
  • Spread evenly in prepared pan.
  • Bake for 25 minutes, or until done.
  • Allow to cool in pan before turning out.

Frosting

  • In the bowl of a stand mixer fitter with the whisk attachment, whisk cream to medium stiff peaks.
  • Beat in cream cheese, one cube at a time.
  • Mix in powdered sugar.
  • Add orange zest, salt, and vanilla.
  • Spread over cooled cookie bar.
  • Cut into 3 vertical strips.
  • Cutting one strip at a time, cut into triangles (use photos above as reference).

Notes

*This recipe was written using an average of the dip and sweep method for measuring flour and the spoon and level method. If you are using a scale, you will need to add 3/4 oz or 22 g  to the measurement for each cup of flour.
How To Store:
Once these bars have cooled, you can store them in the fridge in a airtight container or zip top bag for about 3-5 days. Though, in our opinion, the best way to store these bars is in the freezer! Place the bars in a freezer safe zip top bag and freeze for up to 3 months.
Tips To Make These Cranberry Bliss Bars:
  • When mixing in the dry ingredients, be sure to not over-mix the batter!
  • Bake times may vary depending on your oven. Use a cake tester to see when these bars are baked!
  • These bars are VERY moist and keep best in the fridge or freezer.
