Apple Cinnamon Scones

These Apple Cinnamon Scones are filled with chopped apples, fall spices, and are incredibly tender and delicious! They are the perfect fall breakfast or snack.

Ingredients

  • cups all purpose flour
  • ½ cup sugar
  • teaspoons salt
  • 4 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 Tablespoon apple pie spice
  • ¾ cup unsalted butter, cold
  • 2 cups chopped apples
  • 1 cup cinnamon chips
  • 3 large eggs, lightly beaten
  • ¼ cup boiled cider
  • ¾ cup unsweetened applesauce
  • ¼ cup milk
  • 4 Tablespoons coarse sugar
  • teaspoon apple pie spice

Instructions

  • Heat oven to 400 °F.
  • Line 2 sheet pans with parchment paper. Set aside.
  • Combine 4 Tablespoons coarse sugar and ⅔ teaspoon apple pie spice in a small bowl. Set aside.
  • Whisk flour, sugar, salt, baking powder, and apple pie spice together in a large bowl.
  • Grate in butter (or cut it in with a pastry blender).
  • Stir in apples and cinnamon chips.
  • Whisk together eggs, vanilla, and applesauce.
  • Pour over flour mixture.
  • Stir just to combine.
  • Divide the dough in half.
  • On a lightly floured surface, roll each half into a circle and cut each into 8 wedges.
  • Place wedges on parchment paper lined (or use a silpat) pans.
  • Brush tops with milk and sprinkle with spice/sugar mixture.
  • Put in freezer for 30 minutes.
  • Remove from freezer and bake for about 20 minutes, until lightly browned and cooked through.

Notes

  • Make sure the butter is cold.
  • Use parchment or silpat to prevent the bottoms from over browning.
  • Do NOT overwork the dough! It'll make it tough.
  • Do NOT skip the freezer! It matters!
  • 2 cups of chopped apple equals 1 large apple or 1 1/2 medium apples
