Spicy Cheddar Cheese Crackers... These cracker have SO much more flavor than anything in a box. Crispy, spicy, cheesy, and SO. GOOD. Every bite just melts in your mouth! These crackers make for the perfect gift to give during the holiday season, to serve with a charcuterie board, or enjoy as quick snack.
Grate cheese and allow it to come to room temperature.
Spread Rice Chex on a sheet pan and bake in 350 degree oven for 5-10 minutes, stirring occasionally, until starting to turn a light golden brown. Set aside to cool. Leave oven on.
Combine butter and cheese in a medium bowl. Work together until thoroughly combined.
Crush Rice Chex and stir into cheese mixture.
Add flour.
Mix in completely.
Mix in salt, cayenne, and hot sauce.
Use a half tablespoon to scoop out dough.
Roll dough into balls and place 2 inches apart on un-greased sheet pan.
Flatten dough balls to 1/8 inch thickness.
Bake at 350 degrees for approximately 12-15 minutes, until just starting to color.
Notes
You may need a small bowl of flour to dip your tamper into to keep the dough from sticking.
The cooking time varies. These crackers can be done in anytime between 10-15 minutes so keep an eye on them!
The spices in this recipe are to taste. Be sure to try a bite of dough to see if it has enough or too much spice before baking.
Don't leave these crackers too thick, but also don't make them paper thin! They really need to be about an 1/8 inch thick.
The cheese grates MUCH better cold.
Be sure that your grated cheese and your butter are room temperature.
If using sticks of butter, 7/8 cup is 14 Tablespoons.
