Apple Almond and Cranberry Super Green Salad

Sweet, tangy, sour, and absolutely the best! This apple almond and cranberry super green salad is one of my absolute favorite things to make for a quick and light lunch, or as a healthy side for dinner.

Ingredients

  • 4 cups greens i use a mix of baby kale, baby swiss chard, and spinach
  • ½ Tablespoon red wine vinegar
  • ½ Tablespoon olive oil
  • ¼ cup almonds
  • ¼ cup cranberries
  • cup chopped granny smith apple
  • goat cheese for topping

Instructions

  • In a medium sized bowl, combine greens and olive oil/red wine vinegar.
  • Add almonds, cranberries, and apple.
  • Top with goat cheese crumbles and serve!

Notes

  • If you don't like one of the greens used in this recipe, that's totally okay! You can change it out for something you do like.
  • Make sure your granny smith apple is fresh and not grainy.
  • If you want something a little different, try roasting the almonds!
  • If goat cheese isn't your fancy, try switching it for feta.
