Heat oven to 250℉/121℃.
Spray rimmed sheet pan with cooking spray. Set aside.
Combine oats, coconut, wheat germ, nuts, and cinnamon in a medium bowl.
Stir together.
In a small bowl, whisk vegetable oil, salt, honey, and vanilla together. (It’ll take a little work.)
Pour wet ingredients over dry ingredients and stir until thoroughly combined.
Pour mixture onto prepared cookie sheet and spread evenly.
Bake for 1½ hours, or until golden brown, stirring every 15 minutes.
Cool in pan.
Break apart and pour into large bowl.
Mix in dried fruit.
