Ingredients

Scones

  • cups unsweetened coconut flakes
  • cups all purpose flour
  • 4 teaspoons baking powder
  • teaspoon salt
  • cups cream of coconut

Icing

  • ½ cup powdered sugar sifted
  • 1 Tablespoon coconut milk

Instructions

Scones

  • Heat oven to 375℉/190℃.
  • Line a sheet pan with parchment paper. Set aside.
  • Toast coconut flakes. Set aside.
  • In a large bowl, whisk together flour, baking powder, and salt.
  • Stir in coconut flakes.
  • Add cream of coconut.
  • Mix just until combined.
  • Pat or roll out into a circle that is ¾-1 inch thick.
  • Cut into eighths.
  • Place scones on prepared sheet pan.
  • Bake for 15-20 minutes, until done.

Icing

  • In a small bowl, whisk together powdered sugar and coconut milk.
  • Drizzle on cooled scones.

Notes

  • Make sure you have UNSWEETENED coconut flakes!
  • Watch the coconut while toasting. It doesn't take long to go from toasted to burnt!
  • Coconut cream and cream of coconut are NOT the same thing. Make sure you have cream of coconut before making this recipe.
  • Mix the dough just until blended, not anymore!
  • You can cut the scones onto any shape you like, but keep in mind, baking times may vary.
  • Adjust the amount of coconut milk in the icing to your desired consistency.
  • These do NOT reheat well. They are best served fresh or at room temperature
