Preheat oven to 350℉/177℃.
Spray a 10-inch x 14-inch x 3-inch casserole dish with cooking spray. Set aside.
Working with one at a time, coat both sides of chicken breast in seasoned flour.
Dip in egg wash, making sure to coat both sides.
Coat both sides with bread crumbs.
Heat olive oil (about ¼ inch depth) in skillet.
Fry chicken breasts 1-2 minutes on each side, until golden.
Drain.
Place chicken breasts in prepared casserole.
Spoon ½ cup tomato sauce over each chicken breast.
Top each breast with 1 ounce grated parmesan.
Bake for 15 minutes.
Remove from oven.
Top each chicken breast with fresh mozzarella.
Return to oven and bake for another 10 minutes.
