Easy Skillet Blueberry Cobbler

Treat yourself to this delicious blueberry cobbler! Picture a light and fluffy batter, hinted throughout with lemon zest, and topped with the fresh, juicy blueberries. Truly the perfect dessert for any occasion!

Ingredients

  • 6 cups fresh blueberries washed and drained
  • 4 Tablespoons granulated sugar
  • 4 Tablespoons all purpose flour
  • cups all purpose flour*
  • 5 Tablespoons granulated sugar
  • teaspoons lemon zest
  • teaspoons baking powder
  • teaspoon salt
  • 2 large eggs room temperature
  • 1 large egg yolk room temperature
  • 1⅞ cups whole milk room temperature
  • 5 Tablespoons unsalted butter melted

Instructions

  • Heat oven to 350℉.
  • Spray a 12 inch cast iron skillet with baking spray. Set aside.
  • In a large bowl, toss blueberries with 4 Tablespoons sugar and 4 Tablespoons flour. Set aside.
  • In another large bowl, whisk 2½ cups flour, 5 Tablespoons sugar, lemon zest, baking powder, and salt together.
  • Add eggs, egg yolk, melted butter, milk.
  • Whisk until combined. (It doesn't have to be smooth.)
  • Pour into prepared pan.
  • Spread blueberries on top of batter.
  • Bake for 65-70 minutes, or until the top is golden brown and the cobbler is cooked through.

Notes

*This recipe was written using an average of the dip and sweep method for measuring flour and the spoon and level method. If you are using a scale, you will need to add 3/4 oz or 22 g  to the measurement for each cup of flour.
How To Store:
You can easily keep this cobbler in the fridge. Just cover with plastic wrap or foil and it should keep about 4-7 days.
 
Tips For Sucess:
  • Room temperature is about 70℉.
  • Use an oven thermometer to ensure accurate cooking temperatures.
  • You can substitute frozen blueberries.
  • You can substitute salted butter for the unsalted butter with no adjustments.
