French Onion Soup

This French Onion Soup is home-y, easy to make, ready on about 35 minutes, and is truly SO delicious. It will become your new go-to for dinner during the colder months!

Ingredients

  • 3 pounds yellow onions sliced thinly
  • 4 Tablespoons salted butter
  • ½ cup white wine
  • 3 cups chicken stock
  • 3 cups beef stock
  • 3-4 sprigs thyme
  • sourdough bread slices
  • 2 cups fontina cheese
  • salt and pepper to taste

Instructions

  • In a 6 quart stock pot, melt butter.
  • Add onions and sauté until cooked down and starting to brown.
  • Add wine and cook an additional 5 minutes.
  • Add chicken stock, beef stock, and thyme.
  • Simmer for 15-20 minutes.
  • Ladle into serving bowls.
  • Top with bread slices and cheese.
  • Place under broiler until cheese is melted and edges of bread are toasted.

Notes

Substitutions:
  • If you don't have homemade chicken stock or beef stock, you can use bullion cubes or your favorite store-bought brand.
  • Dried thyme can be used in place of fresh, but you will need to decrease the amount to about 1/8 teaspoon.
  • Fontina is our favorite with this soup, but you can use any kind of white cheese you prefer. A couple of good suggestions are Gruyère and white cheddar.
Tips For The Best French Onion Soup:
  • Make sure the onions are thinly sliced! I highly recommend using a mandoline to make the slicing easier!
  • Use a white wine with citrus notes!
How To Store:
Once the soup has cooled, you can ladle the soup into an airtight container and keep in the fridge for 3-5 days. You can also ladle 1 cup servings (or your preferred amount) into a freezer safe bag and keep in the freezer for months!
