Ingredients

  • 2 cups all purpose flour
  • 1 Tablespoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 2 large eggs room temperature
  • 2 cups buttermilk room temperature
  • 2 Tablespoons salted butter melted

Instructions

  • Preheat griddle to 350℉/177℃ or frying pan over medium heat.
  • in a large bowl, whisk flour, baking powder, salt, and baking soda together.
  • Add eggs and buttermilk.
  • Whisk to combine.
  • Stir in melted butter.
  • Spray preheated griddle with cooking spray.
  • Ladle batter onto griddle.
  • When each pancake gets bubbly all over the surface, flip and brown on the other side.

Notes

  • Room temperature is about 70℉/21℃.
  • If your eggs are room temperature, it will be easier to incorporate.
  • When mixing the batter, don't worry if it's not smooth! Pancake batter tends to have small lumps.
  • These pancakes freeze and keep well!
  • Make sure to add the butter last!
  • Use a cooking spray for the best results.
