Combine all ingredients in a medium bowl.
Mix together with hands until dough is soft and pliable.
Divide dough into 2 ounce portions.
Roll into balls.
Cover and allow to rest for 20 minutes.
Place a cast iron griddle over medium-low heat.
Remove one dough ball at a time and roll into a 6 inch circle.
Place on heated griddle.
Cook until the tortilla starts to puff and is just starting to develop brown spots, about 1-2 minutes.
Flip over.
Continue to cook for 30 seconds to 1 minute, until brown spots start to develop.
Remove to a plate and cover with a damp cloth.
As each tortilla is cooked, stack it under the cloth on top of the others.
