Homemade Honey Graham Crackers

Soft, with just crisp edges, and oh so delicious! These Homemade Honey Graham Crackers are so simple to make and make for a great treat to keep on hand all year long.

Ingredients

  • ½ cup whole wheat flour
  • ½ cup all purpose flour
  • 3 cups oat flour
  • 2 Tablespoons wheat germ
  • ¼ cup brown sugar firmly packed
  • teaspoon salt
  • ½ teaspoon baking powder
  • teaspoon baking soda
  • 10 Tablespoons unsalted butter cold
  • ½ cup water
  • cup honey
  • 1 teaspoon vanilla extract

Instructions

  • Heat oven to 375°F/190℃.
  • Line 2-3 sheet pans with parchment paper. Set aside.
  • In a large bowl, whisk together whole wheat flour, all purpose flour, oat flour, wheat germ, brown sugar, salt, baking powder, and baking soda.
  • Grate butter into flour mixture.
  • Toss gently to coat.
  • Add water, honey, and vanilla.
  • Mix until dry ingredients are fully incorporated and dough is smooth.
  • Working with half the dough at a time, roll out into a rectangle that is ⅛" thick.
  • Use a 4 ½ inch x 3 inch cutter to cut out rectangles.
  • Place on prepared pan.
  • Repeat with remaining dough.
  • Use a fork to prick dough.
  • Bake for 12-14 minutes, until light brown.

Notes

Substitutions:
  • If you don't have oat flour, you can grind rolled oats.
  • To make this recipe vegan, you can use your favorite vegan butter and agave syrup. It won't taste the same with agave, but it will be similar.
Expert Tips:
  • Be sure to a strong-flavored honey for this recipe!
  • Keep dough covered with a damp cloth when not using! It does tend to dry out rather quickly.
  • If dough ever gets too dry, you can work in a little more water.
  • Be careful to not over-work your dough!
  • When pricking, be sure to go all the way through the dough and hit the bottom pan with the fork.
