Homemade Strawberry Nutri Grain Bars

Sweet, jammy, healthy...ish, and SO. GOOD. These Homemade Strawberry Nutri Grain bars are so easy to make, the perfect snack, and a great way to enjoy spring/summer berries!

Ingredients

Jam

  • 8 ounces fresh strawberries chopped
  • cup granulated sugar
  • 2 Tablespoons lemon juice

Bar

  • ½ cup firmly packed brown sugar
  • cup all purpose flour
  • cup whole wheat flour
  • ¼ cup almond flour
  • 1 cup rolled oats roughly ground
  • teaspoons wheat germ
  • teaspoons baking powder
  • cup vegetable oil
  • 1 large egg room temperature
  • 1⅛ teaspoons vanilla extract

Instructions

Jam

  • Combine strawberries, sugar, and lemon juice in a small saucepan.
  • Cook and stir over medium/medium-low heat until sugar has melted, strawberries have broken down, and mixture has thickened.

Bars

  • Heat oven to 350℉/177℃.
  • Line sheet pans with parchment paper. Set aside.
  • In a large bowl, whisk brown sugar, all purpose flour, whole wheat flour, almond flour, rolled oats, wheat germ, and baking powder together. Set aside.
  • In a small bowl, beat vegetable oil, eggs, and vanilla until combined.
  • Stir wet ingredients into dry ingredients.
  • Roll out dough to ⅛-inch thick.
  • Trim edges and cut into rectangles. (We cut ours into 1½-inch x 4-inch rectangles, but feel free to cut yours bigger or smaller.)
  • Repeat with remaining dough, re-rolling and recutting as necessary.
  • Place rectangles 2 inches apart on prepared baking sheets.
  • Spread each rectangle evenly with 1½ teaspoons jam, leaving a ¼-inch border on all sides.
  • Top with another rectangle of dough.
  • Press edges together to seal.
  • Bake for 12-15 minutes, until just starting to brown.

Notes

  1. Make Ahead and Freezing Instructions: You can make the dough and refrigerate it for up to 2 days. You can store the finished bars in an air-tight freezer-safe container for up to a month. 
  2. Jam: You can substitute frozen strawberries for the fresh. If you overcook the jam, you can add a small amount of water to loosen it up. You can use any flavor of homemade or store-bought jam.
  3. Almond Flour: If you don't have almond flour, you can use a blend of all purpose flour and wheat flour in equal proportions. You'll need 1½ Tablespoons of each.
