Ingredients

Graham Cracker Crust

  • 2 cups graham cracker crumbs (16 sheets)
  • 4 Tablespoons granulated sugar
  • teaspoon salt
  • 7 Tablespoons unsalted butter melted

Cheesecake

  • ¾ cup heavy cream cold
  • cups cream cheese* cool
  • ¼ cup sour cream cool
  • ½ cup granulated sugar
  • ½ teaspoon ground cinnamon
  • cups pumpkin puree
  • teaspoons vanilla extract

To Brûlée

  • 3 Tablespoons granulated sugar

Instructions

Graham Cracker Crust

  • Line the bottom of a 9-inch springform pan with parchment paper. Set aside.
  • If you are using whole graham crackers, break up the graham crackers, place them in the bowl of a food processor, and process to fine crumbs.
  • Pour into a medium bowl.
  • Mix in sugar and salt.
  • Add the melted butter.
  • Mix well.
  • Immediately dump into the lined springform pan.
  • Press evenly across bottom and up the sides. Make sure the crust is packed tight. Set aside.

Cheesecake

  • With an electric mixer fitted with the whisk attachment, whisk heavy cream to medium-stiff peaks. Set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat cream cheese and sour cream until smooth, about 2-3 minutes, stopping to scrape down sides as necessary.
  • Beat in sugar and cinnamon, scraping down sides as necessary.
  • Add pumpkin purée, 1 cup at a time, beating until smooth after each addition.
  • Stir in vanilla.
  • Scrape sides and bottom of bowl to make sure everything is mixed completely.
  • Fold in the whipped cream.
  • Pour into the prepared graham cracker crust.
  • Cover the cheesecake with plastic wrap and refrigerate overnight.

To Brûlée

  • When ready to serve, remove the cheesecake from the pan.
  • Sprinkle sugar evenly over the top.
  • Use a kitchen torch to melt and brown the sugar.

Notes

*1½ cups cream cheese = 1½ 8-ounce blocks
You can use a tart tamper or the bottom of a measuring cup to pack the graham cracker crust.
