In a small bowl, stir together brown sugar, walnuts, flour, and cinnamon. Set aside.
Bread
Preheat oven to 325 degrees.
Spray 9 inch loaf pan with baking spray. Set aside.
In a large bowl, whisk together flour, brown sugar, baking powder, cinnamon, and salt. Set aside.
In a medium bowl, combine eggs, vegetable oil, apple cider, boiled apple cider, and vanilla. Whisk until combined.
Pour wet ingredients over dry ingredients and stir until combined. Do NOT over mix.
Fold in apples and walnuts.
Pour into prepared pan.
Top with streusel.
Bake for 45 minutes. Cover with aluminum foil.
Bake an additional 30 minutes, or until bread tests done.

Substituions:
We used Honeycrisp apples to bake into this bread, but feel free to use your favorite baking apple.
Apple pie spice can be used in place of the cinnamon.
If you don't like walnuts, feel free to use pecans or almonds!
Expert Tips:
You could make this bread into one large loaf like the instructions, or into two smaller loaf pans! Baking time will need to be adjusted if you do this.
You may need to cover the loaf with aluminum foil about 40 minutes into baking.
This recipe needs to be kept in the fridge or freezer.
Toasting the walnuts is optional, but recommended to get the full flavor!
