Homemade Buttermilk Pancakes

Buttery, fluffy, and oh so delicious. These Homemade Buttermilk Pancakes are the easy breakfast you've been looking for!

Ingredients

  • 2 cups all purpose flour
  • 1 Tablespoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 2 large eggs
  • 2 cups buttermilk
  • 2 Tablespoons salted butter, melted

Instructions

  • Preheat griddle or frying pan over medium low heat..
  • in a large bowl, whisk together flour, baking powder, salt, and baking soda.
  • Add eggs and buttermilk.
  • Whisk to combine.
  • Stir in melted butter.
  • Spray preheated griddle with cooking spray.
  • Ladle batter onto griddle.
  • When each pancake gets bubbly all over the surface, flip and brown on the other side.

Notes

  • When mixing the batter, don't worry if it's not smooth! Pancake batter tends to have small lumps.
  • These pancakes freeze and keep well!
  • If your eggs are room temperature, it will be easier to incorporate.
  • Make sure to add the butter last!
  • Use a cooking spray for the best results.
