Homemade Buttermilk Pancakes

- 2 cups all purpose flour
- 1 Tablespoon baking powder
- ½ teaspoon salt
- 1 teaspoon baking soda
- 2 large eggs
- 2 cups buttermilk
- 2 Tablespoons salted butter, melted
Preheat griddle or frying pan over medium low heat..
in a large bowl, whisk together flour, baking powder, salt, and baking soda.
Add eggs and buttermilk.
Whisk to combine.
Stir in melted butter.
Spray preheated griddle with cooking spray.
Ladle batter onto griddle.
When each pancake gets bubbly all over the surface, flip and brown on the other side.
- When mixing the batter, don't worry if it's not smooth! Pancake batter tends to have small lumps.
- These pancakes freeze and keep well!
- If your eggs are room temperature, it will be easier to incorporate.
- Make sure to add the butter last!
