Coconut Cream Scones with Coconut Icing (Secretly Vegan!)
These Secretly Vegan Coconut Cream Scones with Coconut Icing are the ultimate breakfast bake! Every bite is perfectly sweet, extra coconut-y, and just SO. GOOD. If you're a coconut lover, these scones are FOR YOU!
Scones 2 ¼ cups unsweetened coconut flakes 2 ½ cups all purpose flour 4 teaspoons baking powder ⅓ teaspoon salt 1 ¾ cups cream of coconut Icing ½ cup powdered sugar 1 Tablespoon coconut milk
Scones Heat oven to 375 degrees F. Line a sheet pan with parchment paper. Set aside. Toast coconut flakes. Set aside. In a large bowl, whisk together flour, baking powder, and salt. Stir in coconut flakes. Add cream of coconut. Mix just until combined. Pat or roll out into a circle that is ¾"-1" thick. Cut into eighths. Place scones on prepared sheet pan. Bake for 15-20 minutes, until done.
Make sure you have UNSWEETENED coconut flakes!
Watch the coconut while toasting. It doesn't take long to go from toasted to burnt!
Coconut cream and cream of coconut are
the same thing. Make sure you have cream of coconut before making this recipe. NOT Mix the dough just until blended, not anymore!
You can cut the scones onto any shape you like, but keep in mind, baking times may vary.
Adjust the amount of coconut milk in the icing to your desired consistency.
These do NOT reheat well. They are best served fresh or at room temperature
