Mixed Summer Berry Tiramisu

Easy, full of flavor, and the perfect dessert to celebrate summer! This Mixed Berry Tiramisu is no bake, quick to make, and oh so delicious.

Ingredients

Filling

  • 1 ¾ cups heavy cream, cold
  • cup powdered sugar, sifted
  • ½ teaspoon vanilla extract
  • 1 cup mascarpone cheese
  • 1 cup blueberries
  • 1 cup blackberries
  • 1 cup raspberries
  • 1 ½ cups strawberries, sliced

For Assembly

Instructions

  • In a large bowl, gently toss the berries together. Set aside.
  • With an electric mixer, beat cream, powdered sugar, and vanilla to medium peaks.
  • Beat in mascarpone. Set aside.
  • In a small bowl, combine amaretto and milk.
  • Soak ladyfingers, one at a time, in amaretto mixture for at least 30 seconds.
  • Place in the bottom of an 8-inch springform pan to cover.
  • Place un-soaked ladyfingers upright around the side of the pan.
  • Spread ⅓ of mascarpone mixture over bottom.
  • Top with ⅓ of the berries.
  • Add a layer of soaked ladyfingers.
  • Top with 1/2 of the remaining mascarpone mixture.
  • Add half the remaining berries.
  • Repeat layers one more time.

Notes

  • Be careful not to over whip the chantilly cream! About medium-stiff peaks is where it should be. Any stiffer and it may become more like sweetened butter.
  • The strawberries need to be cut! Whether you chop them or slice them is up to you.
  • Remember to wash and dry your fruit!
  • The lady fingers need to be thoroughly soaked!
  • For the exterior, with our homemade ladyfingers, it took about 15 to go around the edge. It may take you more or less, depending on how big/small your cookies are.
  • If you use store-bought ladyfingers, it's best to buy the softer ladyfingers for this recipe, as savoiardi tends to be too crunchy and not want to absorb the liquid as well.
  • If you don't want to use amaretto, you can mix together some milk with a splash of vanilla extract to help lend some flavor.
