Buttery Toffee Popcorn and Peanut Snack Mix

Sweet, crunchy, and oh so delicious! This Buttery Toffee Popcorn and Peanut Snack Mix is the perfect treat to enjoy anytime of year. Perfect for movie binging or gift giving! SO. GOOD.
6 cups plain popcorn ½ cup roasted, lightly salted peanuts ¼ cup corn syrup ½ cup salted butter ¾ cup granulated sugar
Line a baking sheet with parchment paper.
Spray with cooking spray.
Combine popcorn and peanuts on baking sheet. Set aside.
In a small saucepan, combine corn syrup, butter, and sugar.
Heat and stir over medium low heat until sugar is melted.
Stop stirring.
Brush down sides of pot with a pastry brush dipped in water.
Continue cooking without stirring to 300°F.
Remove from heat.
Pour over popcorn and peanuts.
Use a silicone spatula that has been sprayed with cooking spray to mix together.
Once candy starts to cool, separate it into smaller pieces.
Check and make sure your popcorn is plain air-popped popcorn! No flavors!
The peanuts needs to be roasted and salted.
Check your thermometer's accuracy before making the toffee.
Keep an eye on your toffee while it's cooking! Don't walk off and leave it, as it can burn very quickly.
Weather seriously effects candy making. If it's raining or very humid, this recipe may not work as well.
Once you pour the toffee, be sure to work quickly! The faster you can get the toffee stirred into the popcorn, the better coverage you will have.
Wait until the popcorn is mostly cooled before beginning to break them apart. You don't want to burn yourself!
