Easy Tomatillo Sauce (Salsa Verde!)

The perfect addition to so many meals! This easy to make Tomatillo Sauce, also known as Salsa Verde, is bright, full of flavor, while having just enough spice to compliment all of your favorite dishes. So. GOOD.

Ingredients

  • 3 pounds tomatillos washed and husked
  • 12 garlic cloves peeled
  • cup sliced red onion
  • 2 large jalapeño peppers
  • 2 serrano peppers
  • ½ cup cilantro
  • ¼ cup fresh lime juice
  • teaspoons salt
  • ¾ teaspoon cumin
  • ¼ teaspoon cayenne pepper

Instructions

  • Place tomatillos and garlic in a large pot.
  • Add water to cover.
  • Bring to boil over high heat.
  • Reduce heat to medium.
  • Let boil for 5 minutes.
  • Take pot off heat and strain.
  • Let cool completely.
  • Core tomatillos.
  • Place tomatillos, garlic, onion, peppers, cilantro, lime juice, salt, cumin, and cayenne into blender.
  • Blend until desired consistency.

Notes

  • When husking the tomatillos, keep them under cold running water to avoid getting your hands sticky.
  • Also, if peeling garlic, you can pop the garlic with the flat side of your knife and run it under cold water to keep the paper from sticking to you.
  • You don't need to wait for the tomatillo's to cool to core them, but letting them cool is not only easier, but much safer, as the freshly boiled tomatillo's will be very hot and may burn you.
  • If you would like a spicier sauce, do not core the jalapeño peppers and serrano peppers. If you don't like really spicy, you can core the peppers.
  • This recipe is naturally gluten-free and vegan.
  • Coring the tomatillos can be a little messy, so make sure to do it over your blender or over a bowl.
  • If you would like a little chunkier sauce, blend it less.
