Spicy and delicious! Whether you serve this with rice or pasta, it will be a hit!

Ingredients

  • 1 pound applewood smoked bacon chopped
  • 28 ounces andouille sausage sliced
  • 1 pound hot pork sausage
  • 6 cups chopped onion
  • 2 cups chopped bell pepper
  • 2 ½ cups chopped celery
  • 1 Tablespoon minced garlic
  • 1 whole chicken cooked, skinned, and deboned
  • 4 cups chopped tomatoes
  • 1 Tablespoon fresh thyme
  • 1 bay leaf
  • 2 ½ Tablespoons [Creole seasoning]
  • 4 cups [chicken stock]
  • 3 pounds shrimp peeled and deveined
  • 1 bunch green onions chopped

Instructions

  • Heat large, heavy pot over medium heat.
  • Add bacon, andouille, and sausage.
  • Cook to release the fat. (Render.)
  • Add onions. Cook and stir until caramelized, about 10-15 minutes.
  • Stir in bell pepper, celery, and garlic. Cook 3-5 minutes.
  • Add chicken and cook for another 2-3 minutes.
  • Add tomatoes, thyme, bay leaf, and Creole seasoning.
  • Stir well.
  • Add chicken stock and bring to a boil.
  • Reduce heat to medium low and continue to cook, stirring occasionally, for about 15 minutes. 
  • Add shrimp and green onions. Cook for another 10-15 minutes.
