Spicy and delicious! Whether you serve this with rice or pasta, it will be a hit!
- 1 pound applewood smoked bacon chopped
- 28 ounces andouille sausage sliced
- 1 pound hot pork sausage
- 6 cups chopped onion
- 2 cups chopped bell pepper
- 2 ½ cups chopped celery
- 1 Tablespoon minced garlic
- 1 whole chicken cooked, skinned, and deboned
- 4 cups chopped tomatoes
- 1 Tablespoon fresh thyme
- 1 bay leaf
- 2 ½ Tablespoons [Creole seasoning]
- 4 cups [chicken stock]
- 3 pounds shrimp peeled and deveined
- 1 bunch green onions chopped
Heat large, heavy pot over medium heat.
Add bacon, andouille, and sausage.
Cook to release the fat. (Render.)
Add onions. Cook and stir until caramelized, about 10-15 minutes.
Stir in bell pepper, celery, and garlic. Cook 3-5 minutes.
Add chicken and cook for another 2-3 minutes.
Add tomatoes, thyme, bay leaf, and Creole seasoning.
Stir well.
Add chicken stock and bring to a boil.
Reduce heat to medium low and continue to cook, stirring occasionally, for about 15 minutes.
Add shrimp and green onions. Cook for another 10-15 minutes.
