Easy Loaded Baked Potato Soup

This easy loaded baked potato soup is simple easy to make, creamy, and absolutely delicious! It is the definition of comfort food.

Ingredients

  • cup butter
  • cup all purpose flour
  • 7 cups whole milk
  • 4 pounds potatoes baked, peeled, and diced
  • 1 pound bacon cooked and crumbled
  • 2 green onions chopped
  • 6 ounces cheddar cheese shredded
  • 1 cup sour cream

Instructions

  • In an 8 quart soup pot or dutch oven over medium heat, melt butter.
  • Whisk in flour until smooth.
  • Reduce heat to medium low and continue whisking for an additional 2 minutes.
  • Add milk, one cup at a time, whisking well after each addition.
  • Once all milk has been incorporated, add potatoes and cook, stirring occasionally, until mixture starts to thicken, about 5-10 minutes (depending on how your stovetop cooks).
  • Stir in bacon and green onions and cook for an additional 5 minutes.
  • Add cheese and stir until melted.
  • Stir in sour cream.
  • Heat through.
  • Season with salt and pepper.

Notes

  • Do not use baking potatoes!
  • When baking your potatoes, just wash them and place them in the oven. You don't have to do anything special. Just bake until fork tender.
  • Once you add the milk to the butter and flour mixture, it will thicken! Don't panic. Just keep stirring and adding milk.
  • Don't skip adding the sour cream. It rounds out the flavors and gives the soup an amazing depth.
  • Always serve this soup hot!
