Easy Homemade Chicken Noodle Soup

Ingredients

  • 1 ½ cups chopped onion
  • 2 Tablespoons butter
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 1 cup sliced mushrooms
  • 1 teaspoon minced garlic
  • 3 cups chopped cooked chicken
  • 2 quarts [chicken stock]
  • 4 ½ ounces egg noodles

Instructions

  • Melt butter in a medium (8 quart) pot.
  • Add onion and cook until soft, about 3-4 minutes.
  • Stir in celery, carrots, mushrooms, and garlic.
  • Cook until vegetables are just starting to soften, about 5 minutes.
  • Add chicken.
  • Stir in chicken stock.
  • Bring to a boil.
  • Reduce heat and simmer until vegetables are cooked through, about 15 minutes.
  • Add noodles and finish cooking, about another 10 minutes.
  • Season to taste.

Notes

  • If you don't have access to cremini (baby bella) mushroom, you can use white button or any other mild flavored mushroom.
  • If you're in a hurry, you can use a rotisserie chicken and precut vegetables.
