Easy Homemade Chicken Noodle Soup

The best, easiest, and most delicious homemade chicken noodle soup you will ever make!
- 1 ½ cups chopped onion
- 2 Tablespoons butter
- 1 cup chopped celery
- 1 cup chopped carrots
- 1 cup sliced mushrooms
- 1 teaspoon minced garlic
- 3 cups chopped cooked chicken
- 2 quarts [chicken stock]
- 4 ½ ounces egg noodles
Melt butter in a medium (8 quart) pot.
Add onion and cook until soft, about 3-4 minutes.
Stir in celery, carrots, mushrooms, and garlic.
Cook until vegetables are just starting to soften, about 5 minutes.
Add chicken.
Stir in chicken stock.
Bring to a boil.
Reduce heat and simmer until vegetables are cooked through, about 15 minutes.
Add noodles and finish cooking, about another 10 minutes.
Season to taste.
- If you don't have access to cremini (baby bella) mushroom, you can use white button or any other mild flavored mushroom.
- If you're in a hurry, you can use a rotisserie chicken and precut vegetables.
