Instant Pot Chicken and Wild Rice

Simple, delicious, and easy! This Instant Pot Chicken and Wild Rice is the perfect way to have a healthy and easy dinner on the table in a few short minutes.

Ingredients

  • 1 cup wild rice
  • ½ cup chopped onion
  • ¼ cup chopped bell pepper
  • ¼ cup chopped celery
  • ½ cup sliced mushrooms
  • 3-4 cloves garlic crushed
  • 1 large sprig rosemary
  • 1 cup [chicken stock]
  • 2 boneless skinless chicken breasts
  • salt and pepper to taste

Instructions

  • Season chicken breasts with salt and pepper. Set aside.
  • Combine wild rice, onions, bell pepper, celery, mushrooms, and garlic in instant pot.
  • Add rosemary and chicken stock.
  • Place chicken breasts on top.
  • Cook on poultry setting for 10 minutes.

Notes

Substitutions:
  • If you don't like rosemary, you can easily substitute with thyme or even tarragon.
  • You can also use dried herbs, but the flavor won't be as fresh and vibrant. You will need to scale the amount of rosemary back if you opt for dried.
  • Store-bought chicken stock can be substituted for homemade.
Expert Tips:
  • Make sure to clean your chicken thoroughly before seasoning.
  • Any rice can be used!
  • Don't forget to add the chicken stock.
