Instant Pot Chicken and Wild Rice

Simple, delicious, and easy! This Instant Pot Chicken and Wild Rice is the perfect way to have a healthy and easy dinner on the table in a few short minutes.
1 cup wild rice ½ cup chopped onion ¼ cup chopped bell pepper ¼ cup chopped celery ½ cup sliced mushrooms 3-4 cloves garlic crushed 1 large sprig rosemary 1 cup [chicken stock] 2 boneless skinless chicken breasts salt and pepper to taste
Season chicken breasts with salt and pepper. Set aside.
Combine wild rice, onions, bell pepper, celery, mushrooms, and garlic in instant pot.
Add rosemary and chicken stock.
Place chicken breasts on top.
Cook on poultry setting for 10 minutes.
Substitutions:
If you don't like rosemary, you can easily substitute with thyme or even tarragon.
You can also use dried herbs, but the flavor won't be as fresh and vibrant. You will need to scale the amount of rosemary back if you opt for dried.
Store-bought chicken stock can be substituted for homemade.
