Ingredients

Cookies

  • 1 cup unsalted butter room temperature
  • ½ cup granulated sugar
  • 2 cups all purpose flour
  • ¾ teaspoon salt
  • teaspoons key lime zest

Icing

  • 2 cups powdered sugar sifted
  • 5 Tablespoons key lime juice

Instructions

Cookies

  • Beat butter and sugar with an electric mixer until creamy.
  • Mix in flour, salt, and lime zest.
  • Turn out onto a piece of parchment paper.
  • Roll into a log 12 inches long.
  • Roll up in the parchment paper.
  • Freeze for 30 minutes.
  • Heat oven to 375 °F.
  • Line 2 sheet pans with parchment paper. Set aside.
  • Remove cookie dough from freezer.
  • Slice into ¼ inch slices.
  • Place on prepared sheet pans.
  • Bake for 12 minutes, rotating halfway through, or until just starting to color around the edges.
  • Cool on pans.

Icing

  • In a medium bowl, combine powdered sugar and lime juice.
  • Beat until smooth.
  • Spread on top of each cookie.
