Heat oven to 375°F/190℃.
Line several sheet pans with parchment paper. Set aside.
With an electric mixer, beat butter and sugars until creamy, 2-3 minutes.
Add eggs, one at a time, beating well after each addition.
Stir in vanilla.
Add flour, graham cracker crumbs, and baking soda.
Mix only to blend.
Stir in chocolate chips.
Using a 2 inch cookie scoop, portion dough.
Flatten each dough ball.
Place a marshmallow in the center.
Fold dough up around marshmallow, leaving a small bit of marshmallow visible at the top.
Place on prepared sheet pans, 3 cookies per sheet.
Bake for 10 minutes.
Cool on pan.
