Line 2 sheet pans with parchment paper. Set aside.
Combine flour, sugar, and salt in the bowl of a food processor.
Pulse a few times to combine.
Add butter, a few slices at a time, pulsing after each addition.
Add water a little at a time, pulsing after each addition, until the mixture forms a cohesive dough.
Remove from food processor.
Roll dough to ⅜ inch thick on a lightly floured surface.
Use a 5 inch star cutter to cut dough.
Place half the stars on prepared pans.
Place 1½ Tablespoons filling in center of each star and spread it onto the points, leaving about ¼ inch border along the sides.
Brush the sides with egg wash.
Top with remaining stars.
Press the edges together lightly with your fingers.
Press a fork around the outer edges of each star to seal completely. Be careful not to press the fork all the way through the dough.
Refrigerate for at least 20 minutes.
While pies are chilling, heat oven to 375℉/190℃.
When chilled, brush tops with egg wash.
Bake for 23 minutes, or until golden brown.
