Thanksgiving Leftovers Sandwich

The perfect way to use up leftovers is with this Thanksgiving Leftovers Sandwich! Every bite is just like having Thanksgiving dinner, but in tasty sandwich form. So simple, but SO delicious!

Instructions

  • Halve bread roll horizontally.
  • Spread mashed potatoes on bottom half.
  • Place green beans over mashed potatoes.
  • Add turkey.
  • Top with cranberry sauce.
  • Add kale, if desired.
  • Top with other half of bun.

Notes

Substitutions:
  • If you have dinner rolls or even hamburger buns leftover from Thanksgiving, feel free to use what you have!
  • If you don't have green beans, you can use whatever vegetable you have. I personally love this sandwich with some roasted Brussels sprouts!
  • Tofu can be used in place of turkey to make this recipe vegetarian and/or vegan, depending on what you have leftover.
 
Expert Tips:
  • This recipe doesn't store well and it's best eaten as soon as it's made.
  • This sandwich is highly customizable. Feel free to use what you have leftover. Just make sure it tastes good together!
  • Any kind of green can be used on top. We used curly leaf kale, as that's what we had a lot of leftover from Thanksgiving!
