Chocolate Chip Cookie Ice Cream Sandwiches

These Chocolate Chip Cookie Ice Cream Sandwiches are the homemade version of everyone's favorite summertime treat...a chipwich! A super simple chocolate chip cookie that's crispy on the edges, but soft in the middle, and filled with vanilla bean ice cream. So simple, but SO. GOOD.

01 Do not over-mix the cookie dough!

02 Don’t forget to line your sheet pans.

03 Work quickly as the ice cream melts fast!

04 Freeze times may vary. Anywhere from 1-3 hours.

With an electric mixer, beat butter and sugars until light and fluffy, about 2-3 minutes.


Mix in egg and egg yolk. Stir in vanilla.


Add flour and baking soda. Mix only to combine. Stir in chocolate chips.


Use a 3 Tablespoon scoop to portion dough onto prepared pans. Bake for 12 minutes.


Turn 7 cookies upside down on sheet pan. Place ½ cup ice cream on top of each upside down cookie.


Top with remaining 7 cookies. Dip sides in chocolate chips. Place in freezer to harden.
