In a medium bowl, whisk together flour, ginger, cinnamon, allspice, nutmeg, cloves, and baking soda. Set aside.
In the bowl of an electric mixer, beat butter and sugar together until light and fluffy, about 2-3 minutes.
Add egg and beat to incorporate.
Mix in molasses.
Stir in flour mixture.
Divide dough in half and form into rounds.
Roll dough to 1/4" thick. Refrigerate, still in parchment paper, for 15-20 minutes.
Remove dough from fridge. Cut into desired shapes. Bake at 350 for 15-18 mins.
