Homemade Naan with Roasted Garlic Herb Butter

Ingredients (for the poolish)

– 2 cups bread flour – 2 ¼ cups lukewarm water – ⅛ teaspoon yeast

Ingredients (for the naan)

– 5 ½ cups bread flour – 1 ½ Tablespoons kosher salt – 2 teaspoons instant yeast – ½ cup olive oil – 7 ounces buttermilk – all of the poolish

Ingredients (for the butter)

– 1 head roasted garlic – 1 cup salted butter, room temperature – ¼ cup fresh parsley

Mix the poolish.

Whisk together flour, water, and yeast. Cover. Let stand at room temp for 3-4 hours. Refrigerate overnight.

Mix the Naan.

Mix the flour, salt, yeast, olive oil, buttermilk, and poolish. Knead for 10-12 mins. Cover. Allow to rise for 1 hour.

Divide the dough

Turn the dough out and divide into 12 pieces. Round out the pieces and cover with plastic wrap for 1 hour.

Press out

After rising, press the dough, one at a time, into rounds. Place on a preheated baking stone and let bake for 3-5 minutes.

Make butter

Combine butter, roasted garlic, and parsley in the food processor. Pulse until smooth.

Melt the butter

and brush onto baked naan. Serve immediately and enjoy1
