Honey Lavender Truffles

01 You NEED to use a high quality white chocolate for this recipe.

02 Be sure that your lavender is culinary grade.

03 Your hands will need to have powdered sugar on your hands to roll the truffles.

04 If your melted chocolate seems too thick, you can stir in small amounts of vegetable oil to loosen it.

Combine cream and lavender in a small saucepan. Heat and let steep 5 minutes.


Strain into bowl with chocolate pieces. Melt chocolate in the microwave.


Stir in honey.


Add food coloring, if using.


Pour into a small rectangular glass casserole dish. Cover. Refrigerate for 3 hours, until completely firm.


Use a 1-inch cookie scoop to portion candy onto prepared pan. Roll candy into smooth balls. Freeze for 15 mins.


Dip in white chocolate. Place on sheet pan line with parchment paper. Allow to set.
