Key Lime Pie Bars

In a small bowl, combine graham cracker crumbs and sugar.


Add butter and mix well. Press evenly into bottom of prepared pan. Bake for 5 minutes.


In a large bowl, whisk together egg yolks, condensed milk, lime juice, and lime zest.


Pour over crust. Bake for 15-20 minutes, or until set. Remove from oven, and allow to cool. Refrigerate.


Beat egg whites until stiff but not dry.


Heat sugar and water. Cook over medium heat to 246°- 250° F. Stream sugar mixture into egg whites.


Continue beating until cooled, about 5-10 minutes.


Lift pie out of pan and top with meringue.
