Lucky Charms Cupcakes

01 Set cold ingredients out ahead of time to allow them to come to room temperature.

02 Be careful to not over-mix the batter.

03 If you’re unsure the cupcakes are baked, you can use a cake tester or tooth pick. 

04 Let the cupcakes cool COMPLETELY before frosting them.

In a large bowl, mix together flour, ground cereal, sugar, baking powder, and salt.


In a small bowl, whisk together eggs, milk, oil, and vanilla. Add to dry ingredients. Whisk until smooth.


Divide batter into prepared pans, filling each cup ⅔ full. Bake for 18 minutes, or until done.


Beat butter and sugar until light and fluffy. Beat in cream, vanilla, and marshmallow fluff. Stir in food coloring.


Pipe onto cooled cupcakes.
